  1. Pat the fish dry, and dip into beaten eggs. Place the breading in a shallow pan, and dredge the fish to coat well.
  2. Meanwhile, heat 2 inches of oil in heavy pot over medium-high heat. When hot - 350 to 365 degrees - add 2 to 3 fillets at a time, frying 2 minutes per side, turning once, for a total of 4 to 5 minutes cooking time. 
  3. Drain on a rack set over sheet pan and keep warm in a 200-degree oven until all the fish is fried. Serve with lemon, tartar sauce, and fried hush puppies.
