Jimmy’s Zucchini Bread
Ingredients
- 2 cups grated zucchini
- 3 large eggs
- 2 cups sugar
- ¾ cup vegetable oil
- 2 tablespoons vanilla extract
- 2 cups The Old Mill Miller’s Choice Unbleached Flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- ¼ tsp baking powder
Instructions
- Preheat the oven to 350ºF. Lightly grease a 9-inch loaf pan.
- Place the grated zucchini in a colander in the sink to drain. In a small bowl, whisk together the eggs, sugar, oil, and vanilla. In a large bowl, sift together the flour, cinnamon, baking soda, and baking powder. Add the wet ingredients to the dry and mix well. The batter will be thick. Fold in the grated zucchinil. The batter will thin out because of the moisture in the zucchini.
- Turn the batter into the prepared pan and bake until it begins to pull from the sides of the pan and a toothpick inserted in the center of a loaf comes out clean, 50 to 60 minutes. Cool in the pan 30 minutes, then turn out onto a rack to completely cool before slicing. Makes one loaf.
