  1. Whisk together buttermilk and 4 tablespoons hot sauce. Add chicken, stirring to coat. Cover and chill while preparing the biscuits.
  2. Preheat oven to 450F. Place the biscuit mix and buttermilk in a large bowl. Stir together with a fork until just combined. Dump dough onto a floured surface and dust top of dough with flour. Pat dough with floured hands into a 7 x 7 inch square, about ½ inch thick. Cut into 12 (approximately 1 ¾ x 1 ¾ inch) squares. Bake 10 minutes or until tops are golden brown.
  3. Whisk together fried chicken breading, cayenne, chili powder, and salt. Remove chicken from marinade; discard marinade. Toss chicken, a few pieces as a time, in breading mixture and arrange in a single layer on a baking sheet while oil preheats.
  4. Pour oil in a large, deep pot to a depth of 3 inches and heat to 350F. Add chicken, in batches, and cook, turning occasionally, until chicken is done, about 4 minutes. Drain on paper towel lined baking sheet.
  5. Whisk together mayonnaise and remaining 2 tablespoons hot sauce.
  6. Cut each biscuit in half horizontally. Spread cut parts of biscuits with about 2 teaspoons mayonnaise mixture. Top with one piece chicken and 1 tablespoon chow chow. Place tops of biscuits on, and serve immediately.
