Pickle Brined Chicken Tenders with Salsa Ranch Dip

Ingredients

Instructions

  1. Place chicken tenders in a large zip-top bag or a shallow dish. Pour pickle juice over, seal bag or cover dish, and refrigerate 1-2 hours or up to 8 hours.
  2. Whisk together mayonnaise, sour cream, buttermilk, and dip mix. Cover and chill.
  3. Place fried chicken breading in a shallow dish. Remove chicken from brine and discard brine. Working with one piece at a time, dredge chicken in breading.
  4. Heat vegetable oil to a depth of ½ inch in a large, deep skillet or pot to 350F. Dredge chicken again in breading. Fry chicken, in batches, 3 minutes per side or until chicken is done. Drain on paper towels. Serve warm with ranch.
Air Fryer Instructions
  1. Prepare recipe through step 3. Preheat air fryer to 400F. Coat both sides of chicken heavily with olive oil spray.
  2. Arrange chicken in a single layer in the air fryer tray (might need to cook them in batches) and cook 10-12 minutes or until chicken is done. Repeat with remaining chicken. Serve warm with ranch.
