Bacon Cornbread Bites with Black Pepper Maple Butter

Ingredients

  • ½ lb. bacon, chopped
  • 2 Tbsp. butter, melted
  • 2 cups Self Rising White Cornmeal
  • 2 Tbsp. granulated sugar
  • ½ teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 ½ cups buttermilk
  • ½ cup butter, softened
  • 2 Tbsp. The Old Mill Maple Crystals
  • ¼ tsp. freshly ground black pepper
  • Pinch ground cinnamon

Instructions

  1. Preheat oven to 400F.
  2. Cook bacon in a large skillet 6 minutes or until crisp. Drain, reserving ¼ cup drippings. If you do not have enough drippings, add melted butter or vegetable to the drippings to equal ¼ cup. Crumble bacon when cool enough to handle.
  3. Brush 36 mini muffin cups with melted butter and place in oven for 5 minutes.
  4. Whisk together cornmeal mix, sugar, and salt in a medium bowl. Add ¼ cup bacon drippings, eggs, and buttermilk and stir just to combine. Stir in crumbled bacon. Spoon about 2 tablespoons batter into each mini muffin cup. Bake 10-12 minutes or until set and edges are golden brown. Remove from muffin tins.
  5. Stir together softened butter, maple crystals, black pepper, and cinnamon until combined. Serve cornbread bites warm with butter.
