1/4 cup OLD MILL PLAIN FLOUR
1/4 cup OLD MILL THICK TABLE ROLLED OATS
1/4 cup firmly packed light brown sugar
1/4 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons unsalted butter, at room temperature
1 tablespoon plus 1 teaspoon well-beaten egg or egg substitute
1/2 teaspoon pure vanilla extract
Heaping 1/3 cup semisweet, milk, or white chocolate chips
Position oven rack in center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment paper and set it aside.
Place OLD MILL PLAIN FLOUR, OLD MILL THICK TABLE ROLLED OATS, brown sugar, baking soda, and salt in a medium mixing bowl and stir with fork to blend. Add butter and blend with fork until moist crumbs form. Beat egg and vanilla together, and add to oat mixture. Blend until a stiff dough forms. Mix in chocolate chips.
Divide dough into 3 portions and mound on prepared baking sheet, spacing 4 inches apart. Bake until lightly browned, about 20 minutes. Let cookies cool completely on wire rack.
Makes 3 cookies.
